Feijoada


A dish consisting of black beans, plus beef jerky, sausage, loin, rib, foot, pig's ear and tail. Served with rice, cabbage and cracklings.
Yield 15 servings

Ingredients:
• 2 kg of black beans
• 1 kg of dried meat
• 1 kg of salt pork
• 1 kg of sausage
• 1 kg Sausage
• 1 kg of
salted pork
• 3 pig's foot
• 2 pork ear
• 3 pig tails
• 1 kg of beef tripe
• ½ kg of bacon
• 2 garlics
• 3 bunches of green onions
• 3 bunches of parsley
• Oil
• Salt


Preparation:
Pick
the beans and wash them. Let them soak in cold water, over night.
Rinse the salted meat to remove excess salt. Let it also to soak in cold water, but in separate containers, exchanging water from time to time.
The next day, boil the meat for total salt withdrawal
After that, take all - salted and non-salted meat - put in a large pan and fry them for a short time
Put
the beans in a pressure cooker, tripe, beef jerky and other meats that require more cooking time.
In another pan cook tender meats.
When the beans and the meat of the other pan are both soft, make aside the following saute:
oil the 2 cloves garlic and pour into a large saucepan all ingredients: beans and meat.
taste the salt,  always remember that when it comes to cooking salted meats, the use of salt should be very restricted and controlled, otherwise, the flavor of the dish  will be easily compromised
and might be too salty ... Simmer for 15 to 20 minutes.

** Side dishes are white rice, orange slices sprinkled with salt and a good cabbage - which is nothing more than cut leaves into very thin strips and sauté with garlic, salt and chopped onion.
