Baião de Dois


Another typical brazilian recipe is the Baião de Dois. Created in Brazil’s northeast region (Ceará) made with rice, beans, jerked beef and sausage, all blended together.
Who sees it for the first time, thinks that it’s only rice and beans, but if you cook it in the traditional way, it is a remarkable dish.


Type of cuisine: Brazilian (Northeast)
Yield 6 servings
Ingredients
1/2 kg cooked cowpea
2 cups cooked rice
250g cheese curd
1 cup clarified butter
250g cooked jerked beef
250g minced sausage
½ cup chopped chive

Directions:
Put clarified butter in a pot, heat it and add sausage.  Braise, add shredded jerked beef and braise them a little more.
Add the cowpea drained, and mix.
Add rice, stir. Add a little of clarified butter, mix again. Season with cilantro and chive, and finally add the chopped cheese curd, a little more clarified butter and mix again. Sprinkle with chives. 
Tip:
The clarified butter may be substituted by common butter, cowpea by beans and the cheese  by un-ripened cheese
